Sangeet is the longest night of the wedding week. There are rehearsed performances, an open dance floor, relatives who have flown in, and a crowd that eats in waves between songs. A fixed dinner at 9 pm does not work – the food needs to move around the room, keep coming through the evening and still be hot when the last performance ends.

How We Plan the Food Through the Evening

• During performances – passed starters and drinks served to the seated audience so nobody misses their family performing

Popular Sangeet Menus

Passed starters: paneer tikka, hara bhara kebab, mushroom duplex, crispy corn, cheese balls and mini samosas.

Mocktail and beverage bar: virgin mojito, blue lagoon, fruit punch, cold coffee and fresh juices.

Live counters: pasta, tandoor, chaat, dosa and a kulhad chai counter later in the night.

Dinner buffet: shahi paneer, dal makhani, seasonal vegetables, biryani or pulao, assorted breads, raita and salads.
